You will need...
  • 1 large celeriac bulb washed, peeled, diced
  • 1 large potato diced
  • 1 large onion diced
  • 2 cloves of garlic sliced
  • 1.5l of chicken stock
  • 200ml of cream
  • italian herbs
  • salt + pepper
  • a handful of chopped parsley
Prep time: 15 mins Serving: 2-4 people

In a large soup pot, heat the oil and soften the onions. Add the garlic and seasonings and cook for a minute more. Add the chopped celeriac and potato, give it a big stir. Add in the stock, bring up to a boil, turn down and let simmer for about 1/2 hour or so.

Puree the soup with a blender. To finish, stir in the cream and butter. Sprinkle with a sprig of parsley in bowl.
